Summer heat is no joke, and who wants to bake anything in this weather?!
Cue fresh Ontario strawberries in a chocolate chia pudding to the dessert rescue!
Chia pudding has been popular for a few years now, and it’s no wonder why people love it. It’s delicious and so easy to prepare with just about any type of milk or plant-based milk alternate that you enjoy.
If you haven’t tried it before, it’s quite similar to a tapioca pudding but boasts some superior nutritional qualities from the small but mighty chia seeds! Chia seeds provide heart healthy omega-3 fats, fibre, and other nutrients like magnesium, iron, and calcium.
Enjoy this pudding topped with fresh strawberries (or whatever seasonal fruit you most enjoy!).
Chocolate Chia Pudding with Fresh Strawberries
Makes about 4 servings (1 cup each)
Ingredients:
- ½ cup chia seeds
- 1.5 cups milk or milk alternative (I like to use unsweetened coconut milk or almond milk)
- 3 Tbsp maple syrup
- ¼ cup unsweetened cocoa powder
- 1 tsp vanilla
- ½ tsp cinnamon
- Fresh strawberries
Directions:
- Mix the chia seeds, maple syrup, cocoa powder, vanilla and cinnamon in a bowl.
- Slowly add the milk as you whisk ingredients together.
- Once mixed, cover, and put in fridge overnight (or at least 4-5 hours).
- Once it has reached pudding consistency (the following day), portion into individual bowls and top with fresh, chopped strawberries.
