Strawberry Spinach Salad with Strawberry Poppyseed Dressing

Strawberry season has finally arrived! (Better late than never, right?!)  So let’s take advantage of all that this season has to offer and include strawberries as much as possible, starting with this delicious Strawberry Spinach Salad!

Strawberry Spinach Salad With Strawberry Poppyseed Dressing

Why are strawberries fabulous? (Aside from being sweet & delicious!)  They also contain flavonoids and antioxidants, which help fight inflammation in the body, reduce your risk of diseases like heart disease and various cancers, and have been shown to improve brain health.  

Spinach and strawberries pair nicely together – both taste-wise, and nutrition-wise.  Strawberries provide a boost of vitamin C which helps our bodies better absorb the iron found in spinach.  This strawberry spinach salad also contains pumpkin seeds which provide an extra kick of iron. We’ve also lightened up the usual creamy poppy seed dressing and turned it into a beautiful strawberry poppy seed vinaigrette, which transforms the salad and adds a burst of colour.  Enjoy!

Strawberry Spinach Salad with Strawberry Poppyseed Dressing

Ingredients:

Salad:

  • 4-6 cups baby spinach leaves
  • ½ red onion, diced
  • 1/3 cup pumpkin seeds, roasted
  • 1/3 cup goat cheese
  • 1 cup strawberries, chopped

Dressing:

  • 1/3 cup avocado oil
  • 6-8 strawberries, chopped
  • 2 tsp honey
  • 2 Tbsp white wine vinegar
  • 2 Tbsp poppy seeds

Method:

  1. For the salad:  Wash and place spinach leaves in large salad bowl. Top with pumpkin seeds, red onions, strawberries, and goat cheese.
  2. For the dressing: In a blender or food processor, blend together all ingredients except the poppy seeds. Once smooth, stir in the poppy seeds. Drizzle on spinach salad, mix, and enjoy!
